He's far less keen on Melisandre in the books, doesn't really buy into her shit but goes along with because he knows his wife and some of his followers believe and she has proved her magic is real or at least accomplishes something. In the show he comes off as being totally manipulated by her.
Also just some other stuff, like him burning followers of the 7 because they wouldn't convert or take down their idols. In the books he kills those people because they were plotting to betray, I think steal his daughter and deliver her to the Lannisters if I recall, but I'm fuzzy on the details of their plot to undermine him.

A Legend of the Galactic heroes type adaption would have been pretty great but I don't think either medium is inherently better at adaptions. It's more how much faith and respect the people adapting have for the original work.
