Because it uses exploits to gain access encryption probably won't help because they probsbly will gain root access or some level of privilege which gives them access. Its not like your going to start typing in two factor authentications to open every picture on your computer. Best you could do is encrypt shit by 7z with a strong password and store those strong passwords in a keychain within the os so a remote keylogger can't be used to just capture the password as it's being typed.

Making a deadman's switch is useless if you don't also encrypt your HDD. It's easy to just remove the hard drive from a computer and put it in another to check what's on it. Hell, I've done it many times myself.
