If you want ambient with piano you could argue that lots of modern classical could be considered ambient due to how minimal it is at times. I would recommend checking out something like Sylvain Chauveau, especially his classic Des plumes dans la tête or even Nils Frahm - Felt. If you want to move into something more just pure piano defiantly check out Edvard Grieg.

However if you want something more completely/traditionally ambient, you should check out Libary Tapes, my personally favourite album from them is Sun Peeking Through since i like how it's pretty noisy at times but Fragments is their most popular album and is also great. Try to get your hands on either one of those.
