Have you listened to King Crimson before?
I'd recommend it. I've heard a lot of people not be into the genre before but still love their music.
Also, KC's album Discipline. Probably the most accessible KC.

Flake music - When you land here, it's time to return, which was the only album they made before they became The Shins.
The Decemberists are great, especially Picaresque (although that album's kinda dark, if you want something lighter I'd go with The King is Dead).
I recently got into Fleet Foxes too, I like Helplessness Blues a lot.
I've only listened to Ode to Sunshine from Delta Spirit, but I liked that a lot and want to listen to more of their stuff.

There's also Fleshgod Apocalpyse and SepticFlesh and plenty of others, but OP doesn't like growling vocals, so Kamelot came to mind.
