I bought a few the other day. I would suggest trying one called Ossau Iraty (or something like that). It is pretty good and it will go over well with most people, even if they don't like fancy cheese.

Cheddar will always be nice, however I do think Gruyere is the best.

It's a little nutty and just a tiny bit fruity.

im a fan of the dubliner, but if i want to get a little more fancy an aged gouda is great. those aren't flecks of mold, it's some crystallized laco salt.

Get some breadcrumbs round that and put it in a pan. Ate that in Strasburg, so very good.

If you're looking for more in a similar vein, try manchego and asiago. Neither is particularly uncommon. CostCo carries them.

I think it's a type of gouda, so similar. Little pieces of it crystallize which gives it a nice texture
