it is possible. i make my own pizza from scratch and have messed around with lots of cheese/sauce ratios. too much cheese makes the pizza heavy, greasy as fuck and more likely to completely ruin the pizza.
my take on this episode is that the chef just got lazy with the dough over time letting it be thick and uneven, then just decided one day that more ingredients = better pizza and started piling it on
