You can't just say "wine" and expect your 5-minutes pasta with chicken to be worth "fine dining".
Fine dining has to use at least two different textures. Like, chicken with meat, hard bones and crusty skin. Not "chewy pasta, chewy chicken fillet and chewy veggies". Of course, "crusty" vegetables would do.
Cuisine is like sex : you always need something soft and something hard.

ever hear of "al dente"? you could most certainly make a pasta dish considered fine cuisine. all I did was simplify it by leaving out ingredients and cook prep.

Fine pasta dish do exist. Gratin use cheese as a crutsy part. A lot of dishes use herbs like chive, just crusty enough. Then you have fresh cream, so that the pasta is the hard part. Take a good hamburger : bread is usually a bit crusty, and beef if the soft part. Then take a tournedos rossini : beef is the hard part, foie gras being the soft one.

I went to a all-you-can-eat buffet in COEX when I lived in Korea once. It was $30 per person. I left without even taking a sip of the water.

Of course with cheese as with anything, moderation is key. Even a casserole can be found in a good restaurant ; they usually place a quite small, separate bowl in your plate.
Cheese can be fine, but at is it "greasy", you can't use too much, and only as a side for "lean" food.
