But the final thing that recently pushed me over the edge was I applied to an unpaid intership, interviewed, and they got back and said "we don't have the resources to train you and need someone with professional level experience"

Hell, just claim "Expert" in Java, C/C++, Python, R. And add the rest to a "I know these too" column. It's a lazy resume, so I assume you're lazy.
