However I listened to Minutemen's discography and I quite enjoyed it,
The way they use jazz chords walking basslines and funk was bretty gool.
I don't really know why they're even considered "punk" but w/e.

If you want specific albums, I think you'd like Fugazi's 13 Songs, The Pop Group's Y, Talking Heads's 77, Fear of Music and Remain in Light and Husker Dü's Zen Arcade.
Other cool punk bands that don't sound like The Sex Pistols and the like are The Stooges, The Velvet Underground, MC5, Patti Smith and Television, although they're usually considered proto-punk. The Desd Kennedy's are pretty cool too and they have varied music.
