A lot of it depends on the location and the color contrast. For instance, I recently had a shoot in Iceland and a black model would have worked fantastically, the contrast between his/her skin and the white/grayness of the atmosphere and the environment would have been beautiful I think.

This stuff about male height isn't actually true. Height is only usually crucial for female catwalk models. Slightly less but also important for male catwalk models.
For models used in shoots, like the ones for underwear or deodorant ads etc, most of the guys used are actually quite short (5'7-5'10). Reason being that its a lot easier for shorter guys to maintain ripped and muscular bodies. This combined with facial aesthetics and willingness to work means there's a lot more choice from this demographic so statistically, the most aesthetic model will usually be in this group.
The pictures are usually either taken with short females, individually or along with other short male models. Combined with lighting, angles and good old editing, you can't usually tell because there's nothing to reference body size too in the finished picture. Special props are quite often made too. I worked on a shoot which was similar to the Jean Paul Gaultier Le Male advert (sailors in row boats). The prop boats and oars and stuff used were all a little smaller than the real things which made the models look a lot bigger than they really are.
Of course, with catwalk models, they're really there in front of you AND they clothes they wear are designed to a certain ergonomic fit so they have to be taller. Also need to be visible for people situated further away etc.

WRT to relativity: I thought I made it pretty obvious but I'll try and give an even more clear explanation. Shorter men have shorter muscles. It is therefore easier for them to build muscle and maintain it than for taller men. They also require fewer calories than their larger counterparts meaning nutrition is easier to follow. Once you get over 30, this becomes HUGE. This means that the number of models around the 5'7/5'8 mark is greater than the number of models who are 'tall'. Now you need to find someone who matches the facial criteria you need, has availability, wants to do the work etc. This further narrows down options. It comes down to there being a higher probability of the model 'perfect' for your product to be within the short group.
Easier than trying to endlessly search for the equivalent model but who's also tall is to just make everything around the model small. That gives the illusion of the model being bigger than they are.
But sure, 5'9 industry standard, NOT threshold!
