I see people all the time who never touch food with their hands while cooking. Using a tong for everything, even moving vegetables around the counter. I've also seen people wash onions under the tap after peeling the skin off.

Garlic doesn't burn unless the oil is too hot. It an be a full clove (not sliced) and it would burn if the pan were too hot. Pretty much a golden rule of cooking is to not burn things...
