Watch the despecialised versions of the original trilogy, since they're how the movies were originally intended.
Start with Episode 4: A New Hope since thats the original, then Episode 5: Empire Strikes Back and then Episode 6: Return of the Jedi
If you want to watch more, then watch Episode 1: The Phantom Menace, Episode 2: Attack of the Clones, Episode 3: Revenge of the Sith and Episode 7: The Force Awakens, in that order.

For first viewings I recommend the Heinklen viewing order:
1, 4, 2, 5, 3, 6, 7
It really allows you to grasp everything that's going on and the ties between the movies.
1,2,3,4,5,6 is the order Lucas intended them to be watched. It makes the Obi Wan- Vader duel and Luke trying to turn Vader back into Anakin more emotional
Ignore the people saying that you should avoid the prequels. Watch them and make up your own mind. They are not as bad as the circlejerk implies and they hugely expand the SW universe

just watch the originals. empire is generally regarded as the best. dont fucking think too much about what star wars has become. dont go to fucking wookiepedia and look up the backstory for why there was a fucking monster in the trash compactor and you'll be good. just enjoy them for being 3 pretty good and entertaining movies because thats all they are.
