Why would they make the Matrix so dull and boring? Wouldn't it be easier to create a place based on everyone's desires and fantasies so that no one would ever want to leave?

The better question is why use humans as an energy source. They consume way more energy than they produce, you would have a massive net loss of energy trying to use them in that way.

The movie is mainly concerned with the simulation, not the how's and why's of that simulation. What other reason could you come up with for them keeping humans that is within the realms of biophysics?

Because they need humans to have purpose. The Machines of 01 were created to serve and aid mankind, and despite mankind turning on them and wrecking the world in the process, that is still at the core of their being. They only ever defended themselves from the wrath of their fearful creators, and when those creators made the world unlivable, they saved them in the only way they could.

That's exactly what the First Matrix was. It failed. That they tried again shows how devoted the Machines really were to humanity.

The machines made contact with an alien species and that alien species pays the machines to produce a massive collection of Truman Shows for them to watch.
