the head of state is the ceremonial leader of the country without any real power, they do basically what you said, attend ceremonies and diplomatic events
the head of government does the actually ruling but only via support of their political party or coalition of parties to form a majority in parliament, basically congress
when you look at it this way you can easily see its actually better to have a royal in the head of state position because its more prestigious which makes sense for a position entirely about prestige, where it gets confusing is this system had been used in England for centuries when USA started their war of independence to install their alternative dictator styled 'president' with actual ruling power while berating the english for being undemocratic with a powerless royal

no single person wields power in the parliamentary system, the president in your system can declare war (as long as he doesn't actually call it a declaration of war)
it is absolutely undemocratic

they are elected to head the executive branch of government. of course the executive branch would be the one conducting military actions and dealing with foreign affairs it's in the name, 'executive'. why would the judiciary or legislature being doing it instead? presidents will use their executive power and people vote based on this. it's not undemocratic.
