I don't really learn other peoples' songs/riffs anymore, but last time I did, I used guitar pro.
Plain text tabs don't really have good rhythm info so you can't sightread them without knowing the song, which I guess is what woke ass niggas do.

they're fine. he makes good points about not relying on them for various reasons, but he's mainly talking about in a jazz context. you don't need to sight read much in rock/country/pop music so it tends to work better in those genres.
a lot of tab does have rhythm notated

not really, there's no need to know how to read standard notation assuming you're in a group or band with only other guitars/basses and a drummer, if you really need to write something out tabbing it is a perfectly viable option

literally just listen to the song and try to play it
if it doesn't sound right then try a different fret
if it's too fast then slow it down a little bit and try again
that's all there is to it, I've never looked at a single tab
