Either the drummer is a vital part of the band that can play his instrument or because muh authenticity. The difference between an average drummer and well programmed samples is marginal in most music.

Because drum samples sound like dog shit even in the hands of the most talented producers/arrangers and lack any of the sonic impact of live drums.
