The best ones I have made are just with garlic, lots of chillis (I like scotch bonnets), apple cider vinegar and sugar.

Cook down chopped chillis and garlic for a little bit in the cider and sugar, blend up once soft then taste and add more sugar/vinegar as required. Boil up until it thickens and put in sterilised bottles. My friends and family love it.

Nice, how long did you ferment it for and how long did you age it?

fermented for about 4 weeks @ 65ºf
secondary xfer for another 4 weeks @ 65ºf
kegged it and now it's aging...the stuff in the glass is what wouldn't fit in keg

kegged in december 2016 and it's aging at 65ºf

That's why I keep them in a wine cellar you dunce. Fun fact about brewing, you don't have to keep your batch in direct sunlight.

I know right? A lot of people seem to think it's pointless knowledge but it's a skill none the less and I think it's awesome. Even more so if it's from your own garden. People are lazy now-a-days and they put little to no effort into anything.

I was never so good at the crafting part of it as much as putting it together. My family pickles peppers, garlic, dill etc... either way, I do enjoy it. Anyone do anything similar?
