But Endgame never happened. It was nullified when Old Janeway convinced Young Janeway to go into the borg transwarp hub. Soon as Young Janeway made it back to the alpha quadrant, the temperal paradox happened and if Voyager had an 8th season they would have been reset back into the delta quadrant. If Old Janeway did the same act again Voyager would be in a temperal loop. Voyager never made it home.

They ignored logic and it was a massive plot hole they ignored. Old Janeway could not have gone back in time if Young Janeway made it back with Old Janeway's knowlege. Old Janeway was the accurate timeline, so seven and chakotay are supposed to be dead.
Star Trek has never had consistent mechanics for how time travel is supposed to work, but if we take the more recent stuff as how they've finally settled it internally, there isn't a single timeline that going backwards would alter. Instead, going back in time causes a branching effect, where now both timelines still exist as alternate realities. To keep things simple, the "prime" universe is the one where Old Janeway goes back in time to create a reality that exists in parallel to her own. It is this parallel reality that, for example, the Nemesis movie takes place and is also the reality that Spock comes from when he travels back in time to create a 3rd reality in the Abrams series.

It could have been old or young depending on the time the cameo took place. Old Janeway took 16 more years to get home than Young Janeway. Old Janeway erased her timeline and created a loop when she met Young Janeway. Both Janeways made it home but Young is the only one that will continue past that point in the parallel timeline. You have to pick which to believe.

Well the new JJ Trek universe explains it. Old Spock came from the prime universe. It's the same concept. Young Janeway created the parallel TNG universe which is now the prime TNG universe.
Any time you see the All Good Things Starfleet outfit, that's the Alternate Future.
The crew always changes things so that the Alternate Future never comes to pass, so you'll never see those costumes in actual use.
