I tell them. Unfortunately, most people don't know what I'm talking about (Broken-beat), I would love to find people with similar taste to my own.

I say I like everything then ask them what they like. Then I make a discussion based on what they like, trying to recommend them albums that will force them to branch out more and find more experimental stuff.

Now he'll go listen to a nice jazzy and culturally relevant hip hop album, and I can recommend him more obscure stuff like Death Grips later on or maybe go into jazz, depends on what he likes about the album (I mean, everyone likes Nas)

Usually I have some dumb sarcastic answer, because most people don't really care and the real motive behind their question is more about some social ice-breaker process than factual answers and they can gauge who I am based the approach of my response and if I make a joke they can think oh cool this guy is laidback and self-deprecating and blah blah what a neat person, as opposed giving them some hyper-specific esoteric answer like the majority of the board would do in which case anyone asking would have their autism meter's needle twisting into a corkscrew from bending so hard to the left and duck out of the conversation as quickly as possible (hey I'm gonna run and grab a drink, talk to you in a bit)

I usually say, I like music with a "woah" factor or really memorable moments. Those come from so many different genres and styles. I've been getting into modern pop; I think it's really underrated and unfairly written off. It's disrespectful to the producers, songwriters and engineers who bust their ass to work on the music, but that's just my opinion.

I do this:
I ask them what they answer first.
If they say "I listen to everything..." or something like that, I change the subject

Yes, I change the subject because according to people here saying something like "I have been listening to math rock recently what math rock bands are you into", will make the other person feel bad and so this is a bad thing to do.

The thing is you can't know what he likes from what he said "I listen to everything", so you CAN'T know is what you will say (basically the genre you will use instead of math rock) is something he knows and so wont make he fell bad

Firstly, just don't ask them what bands of the genre they like if you don't know for sure that they've heard of the genre or not. Also, understand that someone saying "I listen to everything" doesn't necessarily mean they think that they've heard every specific subgenre, so they're not necessarily going to feel bad if you mention a subgenre they haven't heard of. Secondly, do your best to guess if they've heard of the genre or not, and if you think they probably wouldn't have heard of it, then phrase your statement like "I've been listening a lot to a genre called ___ lately" but if you think there's a good chance they have heard of the genre, say "I've been listening a lot to ___ lately." Either way, it's really not a big deal if you guess wrong and use the opposite phrasing, I don't think it'll make them feel bad, but it's just those are the most natural ways of phrasing the statement in my opinion.

No, it would not. If someone says that they "listen to everything", they might mean that they listen to rock, they listen to metal, to country, rap, pop, electronic, etc. but there could just be a few classic rock artists they've heard and so they figure that makes it okay for them to say they "listen to rock," and maybe they've heard a few thrash metal bands and so they figure they can say they "listen to metal," and they've listened to dubstep, so they figure they can say they "listen to electronic," etc. So they figure they can say they "listen to everything," because they've heard a bit from every genre that, in their minds, exists. Of course, most people haven't actually listened to a bit of each genre that exists, but there are people who think that they have, and those are the people who are most likely to tell you "I listen to a bit of everything." But even those people don't necessarily mean that they do know of every subgenre that exists within the main genres they listen to.
