Cuphead is not hard, but it's about memory and reflexes, you can buy it cheap and leave it there for that time when you got absolutely nothing better to do in 3 years.
Probably Castle crashers and Battleblock theater too, they are cheap and once you go into hard difficulty you can spend a couple hundred hours to get 100% completion.
Best bet for both of those characteristics are indie games.
