I am a simple man, I like sharp cheddar, pepper jack, and swiss.
Right now I'm loving me some swiss cheese, I like it's firmness and the fact that it stays firm on a sandwich if I get too busy to eat lunch for a day or two.
Swiss has a distinctive mellow taste that doesn't overpower the sandwich or get lost in it either. I also like it straight and the way that it compliments a nice summer sausage or salami slice as a snack.

fuck brie, it's barely cheese. Shit is so soft and weak, it doesn't deserve to sit with the ranks of pepperjack or swiss.
Get 4 or 5 good cheeses, start from mild, sample some with a few wines, and as you said fruit nuts and honey, then move slowly to the ripest strongest cheese. Quite a flavor adventure. I had the chance to enjoy an evening just outside of Paris doing just this. The French countryside is beautiful. I cooked a great meal. The hosts topped it off with a cheese tasting and Armagnac.
They were grilling enthusiasts, and I’m American. I grilled a pork loin with a sweet Chile rub, along with grilled sweet onions, peppers, and squash. Had it with a nice spicy red wine that the host’s son makes. Perfect pairing.
