As far as polysynths go the Minilogue is pretty much it in that price range
Too bad Juno 60s got so overpriced
Also if you have the patience to program it you could probably pick up a DX7 for that or maybe a little more
Novation Ultranova is digital but it's cheap and sounds good

not sure where you're looking, but there's plenty of great synths I can think of in that price range.
JX-3P, JX-8P, Alpha Junos, Akai AX80, Ensoniq ESQ/SQ, some of the lower-budget Sequential Circuits polys, Oberheim Matrix 1000 if you're into rack units, even a Juno 106 will come around for 600-700 if you're patient.

And DX7s are like 200-300 bucks at most, if you're paying 600 dollars are more you are getting royally fucked over.

for ~600 dollars, the only DECENT sounding polyphonic synth will be a used JUNO 106 or 60.
The rest will sound like unmusical, cold sounding shit.

there are like eight DX7s in my local music shop from 150-250, and even on ebay where prices are super inflated they don't really sell for above 400

One based on the ARP would be ideal but any is good.

I'm going into this as a novice. Polyphony just seems really useful.
I'm willing to work with whatever my budget can get me, but if giving up polyphony for useful features is advisable I'd be willing to go that route.

Deepmind 6 isn't too bad if you want a large keyboard but only 6 voices. Fairly easy to program as well.
