OP I've been a broke-ass student for a while and I found a good recipe that I've been eating regularly. It's filling, nutritious and I'm not sick of it yet.

2 Lipton Instant Rice packs of your choice (1.00 each)

1 can vegetable medley/mixed vegetables (.80 cents if you get store brand- they're literally canned vegatables, they're not going to be any different from actual quality brands)

1 can of beans (also .80 cents or so)

make the rice by its recipe (usually low to med heat for 8-12 mins) and add the beans and vegetables. Add salt/pepper/whatever sauce you like/may have.

It's good, filling, nourishing and makes enough to last 3 days if you're a fat fuck. If you're better at portion sizes you can probably space it out for 5 days (one meal a day with this)

Not for 2 people at 100 bucks a month.

Look up your local food bank, they usually give out canned food, bread, and fruit for free and dont require ID.

Tuna in the cans is cheap af, tortila, ramen, rice, ground chicken is really cheap in where i live, dont forget some veggies and dont buy more than you can eat because you gonna start wasting food, dont buy chips cuz they are waste of money dont buy drinks, drink water and tea or some coffe. look at the prices before you buy. most of the product prices differ in most shops so go around different shops and check in what you should buy at which shop. gl man

dollar tree usually has all these things listed, you can get 8 eggs for a dollar, they also sell milk, frozen veggies (small selection), rice, tuna in a can, liter sodas. they dont do bulk items tho, also they have frozen meals just remember, dollar TREE is the one where everything is a dollar

the eggplant is a good choice too dude! I know a recipe of lasagna made with eggplant that's cheap and super delicious

I'm not american, but there are some stores like this dollar tree where I live. Frozen meals aren't an option to buy, but I used to freeze my food when I was working (I woke up 5am and came back 2pm every day), so I could eat faster and study more

its 50c a can here so it was worth a shot to offer, with veggies it is probably best to buy frozen, cheaper and still a veggie is a veggie.
also try this simple recipe, had my doubts about the taste but it was really good:
black beans in a can (strain them),
white bread (toast it),
just put the beans straight from the can (after you strain them ofc) on the toast, some salt and peeper on top, few dabs of hot sauce and vuala fucking tasty as hell, cheap and easy to make

thats smart, freezing some foods also makes them last longer, you can make scrambled eggs in a breakfast burrito type thing add proteins and freeze and pop in the microwave for a minute or so when ready to eat

dehydrated fruit might last longer if youre a fruit person, and you can put it in oatmeal and once its wet it tastes like real fruit.

not OP, but oatmeal is a tricky thing for me. I love how filling it can be, but it's like a bad night of vodka. If you get oatmeal that's too old/mealy, it can make you throw up just thinking about it.

beans and toast are the best, had doubts before i tried but once i tried i eat it like once a week as a snack and it fills you up.
and if your gf doesnt like thats not a big deal because you only get around 4-6 pieces of toast with a can of beans so i dont think she will mind if you gonna eat that with toast in the morning while she gets eggs and toast. also another tip if you live by the lake, river sea or some sort of water saurce and you have fishing rod try fishing on your free time. fresh fish for free and you get some time for yourself. can forget about all the shit is happening and just chill even if you dont like fish its good to eat it from time to time

you could always take a few slices and attempt trying it in your microwave/toaster oven! but only a few so you dont waste much. i do think its worth a few slices to try because this could lengthen your fruits life.

soups are easy too, they just take some time to prep

Go to Walmart or any grocery store and get a loaf of French or Italian bread. Usually around 1-2$

other things that come to my mind is zucchini filled with layers of minced meat/cheese cook in the oven 120*C about half an hour (time depends on how much meat you used)
learn to make crepes, you can eat them with basically anything so crepes with ham/cheese/beans/peppers/cauliflower makes for a half decent poor man's dinner.
fridged french dough is your friend, wrap it around anything, bake to golden color, eat.
salads sound fun but they're not worth the effort, do just 1-2 vegetable salad at once, rotate the veggies.
