If we could pretend that this wasn’t retarded for a second, and they were moving at orbital type speeds the intense heat of an actual sun would evaporate the water before the two ever collided. Sun wins. But if they were moving at near light speed then the heat would actually separate the hydrogen and oxygen, which would both then combust, thereby actually fuelling the sun and making it larger.
