I don't understand why the adamantium bullet was supposed to be a guaranteed suicide. Logan has already been shot in the head twice with bullets just like that and lived in earlier movies.
And why was that shot into logan's clone's head a guaranteed kill? Wouldn't he just regen and wake up like Logan did in the earlier film?

Honestly, it was just a plot device. Just needed a reason to hit the brain of the bad guy so his healing factor wouldn't work.
I also hate when people say it was because of the timeline, and that the adamantium bullet can destroy adamantium because of the timeline change. A timeline change from 30 years ago wouldn't change the physics of an elemental compound.

I think, in comparison to deadpools healing, Logan can't fix/recover his telomeres and that's why he got older and suffered from the adamantium inside of his body

It was the fact that his healing factor was trying to fix the adamantium poisoning and his newer stab/gunshot wounds. Deadpool doesn't have this problem. Without the adamantium Deadpool and Logan would have the same healing factor.
