Because since the 80s the industry has become heavily manufactured and record executives have most of the say in how pop stars are presented. Most female pop stars start off cute and fun, and then have their "good girl gone bad" phase. Britney, Rihanna and Beyonce are all examples of this. The record executives repeat the same tried and tested "personality paths" for each of their stars because it's good for sales. Think of all the Simon Cowell types in the industry who do this.

It's not that no interesting personalities exist in pop today, it's that we don't get to see them because the marketing process is so planned and prepared. Pop stars rarely get a chance to let their real personality shine through as a result. The industry was slightly different before the MTV/video age of music however, when a lot of eccentric and unpredictable characters such as David Bowie were left untamed and were allowed to present themselves as they wished.

Don't blame modern pop stars, blame the corporates who infested the industry. Yes, music has always had those types, but these days it is more apparent than ever.
