Manstein's entire plan for the war in Russia involved letting the Russians take back territory, encircling them, and then destroying them. Hitler couldn't understand modern war to the point where he could conceive that giving up conquered territory was actually a prudent move, hence he fired him. Rommel and Guderian on the other hand were not generals who thrived on the defensive.
