Not really a symphony, but the cycle which makes up Chopin’s 24 Preludes is for me a singular achievement.

Medtner is pretty good. check out his piano concerto no. 1, op. 30 sonata, and "night wind" sonata. Liszt's transcriptions of beethoven's symphonies, performed by Cyprien Katsaris, are sublime.
