depends on the steak and but for leaner cuts more towards medium-well for fattier steaks seared and that's about it. Still think the japs got this one the bag with that hotpot thing makes eating hunks of under seasoned meat of varying doneness look downright plebeian.

Making my sunday steak tonight only thing that ever changes is the cut:
1.5 inch thick new york cut
pat dry steak and rub with olive oil and shit tons of pepper
salt one side of steak (first side cooked)
add a little olive oil to pan
set steak salt side down 5 min and salt other side
flip steak and add butter
spoon heated butter on steak 5 min
take steak out to rest and make rue from pan butter
make sauce from rue. sometimes i skip rue and make red wine sauce

well done is best desu

if you need ketchup, your steak is already ruined

I've had a lot of normal store bought steaks cooked rare i could cut with my fork easy. gotta pick the steaks with the right marbling if u at regular store
