Sometimes I'll even make a soup when my mother visits, and I'll make a point of putting it through the blender just because she thinks pureed soups are so much classier than chunky soups, and she'll ask for hot water to pour in it to thin it out even more

it's a special soup that is made with a piece of (already cooked) meat so that it gains a bit of its flavor. After the soup is done, the meat is removed, sliced and added to the plate you serve the soup

The meat in question is chouriça which is pork (not sure which part) seasoned in wine+garlic, then dried, and finaly stuffed into a sausage-like recipient (originaly animal intestines) wihch is then cooked/smoked to preserve it.

it's a hearty soup and fills like a meal only by itself, easely the best soup we have, but don't expect it to be good if you go to a restorant, they often make the soup en masse and cut on the cabbage so the end result is much weaker

It's all the parts of the pork that you wouldn't serve as a steak, basically. And not in a hot-dog trying to disguise it way. It came to be so that you could use up every part of the animal once you butchered it.

No, we use the intestines only for the skin (the condom-looking thing). I think some chouriços and the like use a synthetic skin nowadays, but since the interior has larger chunks of meat/fat/filling than yours (and being meatier/spicier as opposed to wet-cured), you don't notice the difference.
