Honestly it just makes me think Jedi are just like those social autists who collect katanas, swords, and knifes despite one .22 caliber pistol being completely superior to all of them.

Lucas fucked up the prequels by making the Jedi a very large, well known, and respected organization in the few years leading up to the Republic's fall. The fact of the matter is that they were an ancient cult that relied on old ritual, and one of those rituals was light-sabers. Before the fall of the Republic the Jedi should have been a once-venerated but now sneered-upon and ignored group of weirdo's in cloaks who still play with swords and try and lift stones with their mind in an age where robots do all the work and blasters can rip holes through steel walls.

seems to me that the better question is why the Sith still use lightsabers

there are a lot of reasons for the Jedi to still use them - they love their traditions, they undoubtedly value the defensive applications of the lightsaber, and they have a vested interest in downplaying the importance of violence and martial skill

No one in the prequels knew how to use anything effectively. Just look at the assassin scene from attack of the clones, the dumbest shit ever.

To be fair to George the Jedi didn't really do much in the public eye, the grand majority of people living in the galaxy never interacted with, met or probably even knew what a Jedi was.To the average joe the Jedi were just another upper class elite who only ever dealt with major political figures such as Royalty and the Senate. They had some sort of ceremonial role as guardians of the republic and that was it. Which was probably why most people didn't really bother to question the Emperor's claims that the Jedi attempted to assassinate him.

Why not get one of those Gungan shields? Why not build a lightsaber that can shoot (should be fairly simple, just add another button to remove the magnetic field or whatever is holding the beam in place)?

Lightsabers cant shoot because the beam is basically a loop that goes back into the handle. It used a completely different technology than blasters, which use tibanna gas. I'd imagine that if you tried making a lightsaber without the closed loop design it would become way too unpredictable and erratic
