Pablo Hidalgo and Jason Fry have both stated that the old Essential Atlas map is still canon and they're still adding the new planets onto it. You could just go through this one and ignore the planets that haven't shown up in Canon yet.

Because it's a fantasy in space, replace everything with a natural world and notice how everything fits better.

It seems illogical to me to have habitable worlds near the core of a galaxy. The amount of crazy shit flying around would make it impossible for life to evolve there, surely.

If the Star Wars galaxy is about the size of ours then a full rotation takes over 200 million years.

It seems natural to orientate the coordinates along the center of the galaxy instead of basing them on the absolute nothingness of space.

Because unlike something like Star Trek the mechanics of the universe aren't as important as the characters and story being told. If the story demands that Han Solo pushes a button and instantly travels across the galaxy than he does so. The story isn't beholden to recognize that traveling from end of the galaxy to the other would take x number of space days or w/e.

They shouldn't be, but since Han & Co were able to just fly to Bespin from Hoth without a hyperdrive they probably reconnected it to be in the same system. In ESB Hoth is in "The Hoth System" and Bespin is in "The Noad System"

Hoth is in the Hoth System and Bespin is in the Bespin System. Anoat is the system in between the two.

To actually answer your question though, the stupid "the force binds everyone" excuse means that writers are allowed to throw preexisting character where they really shouldn't be. Things like Chewbacca in episode 3 make sense, but really make the size of the galaxy feel tiny.

The galaxy is tiny with hyperspace. Hoth to Dantoonie is like maybe a week of travel on a normal fast ship, maybe a bit more on a slow freighter.

Maybe they're trying to reorganize the canon in a way that's now overly cluttered with constantly retconned nonsense. The Rakatan's Infinite Empire makes sense and it was forever ago, Darth Bane was a big guy and easier to implement for the time being than: Freedon Nadd, Naga Sadow, Exar Kun, Revan/Malek, Nihilius/Sion, and other various Sith Empires.

Their basically highways set up by explorers. They connect to the main important planets, and smaller routes connect the rest of the planets. You can also just hyperspace all willy nilly, but then you'd have to calculate the route yourself.

Dantooine was a planet mentioned in the first movie, where the rebel base was before Yavin.

I don't mean literally small. The SW galaxy is huge. I mean the sense of scale is all fucked because of things like Chewbacca and Yoda knowing each other in III and Greedo just so happening to know anakin in I (not sure if this is still canon but it's still a good example).

I have no real issue with it because it leads to better stories with known characters, but it really is noticable to even the most casual star wars fans. They try to write it off as "everyone is binded by the force", which KINDA works but it doesn't actually help at all

It's all writer, fanservice, and human-bias. All stories focus on human protagonists, more or less. Even if the galaxy is mostly human, it's kind of annoying when every single main protagonist can't be something non-human that still speaks basic. I don't care for the Clone Wars/Rebels cartoons because god the art style, but at least they managed to make main characters out of a Togruta and Twi'lek, sort of.

Disney keeps dropping little bits of Kotor lore everywhere, like including Rakata Prime for no reason (it wasn't mentioned anywhere in the new books), bringing back the Hammerheads and Malachor...
