The biggest problem with the EU is it attempts to take the light sci-fantasy of star wars and make it SUPER DUPER DEAD SERIOUS.

This doesn't bug me but I hate the Vong for other reasons.

It comes from a time in the EU lifespan where every author wanted to be the super most important book in the EU, so while we got things like the thrawn trilogy which were important, but not required and still pretty good, we also got things like the Vong who literally are the most important beings in the Star Wars lore to the point where palpy created the empire specifically to combat them. it's just the author jerking himself off over his super cool idea and all it does is bog down the EU

A franchise can have more than one tone, especially when said franchise exists in a universe like SW.

I liked the light heartedness of the OT. I liked the more kid friendly Clone Wars show. I liked the dark and serious EU novels.

I don't get why SW fans want everything to be the same. The same characters or their archetype, the same plot, same factions, same tone. It's mind numbingly dull.

It's like saying The Punisher shouldn't exist because Spider-Man is light hearted.

When I was a kid I was excited to learn that those movies I loved had a whole extended universe to them from my cousin. The excitement promptly died at Ssi-ruuk.

Don't even touch the topic until years and years down the line. After episode 9 comes out and probably even after the inevitable Old Republic trilogy.
Make it a huge event with a movie, a bunch of tie-in books, an ongoing comic, and maybe even a video game. It should be a huge deal.
