It's just his style. Honestly, I think sex is heavily overused in movies these days. It usually serves no purpose but showing off the titties of some actress to appeal to the male audience. In like 90% of all cases it would have been sufficient to suggest the sexual relationship without spelling it out. Subtlety is a dying art.

He makes kinos, you don't need sex to tell the story.

Agreed, he doesn't prominently include it in the stories because it serves no purpose in the story when you can just assume that two people are intimate.

Nolan is one of the only directors to not care about pandering to minorities, or anything like that. He cares about stories he feels like telling, and his movies are succesful enough for him to have complete freedom on what he does.

Nolan tells the stories he wants to tell, how he wants to tell them. WB wanted to force him to make TDKR in 3D yet he said no because to him it doesn't add to the experience of watching a movie and chose IMAX instead.
