He was Corleones top enforcer, even the Don was scared of him. Corleone sends him to Sollozo with the story that he wants to switch sides and Sollozo arranges a meeting and strangles Luca Brasi. He sends back Brasi's bullet proof vest with the message he sleeps with the dogs. He was a good friend.

The little bit at the wedding when he's practicing what he's going to say to Vito is such a great character detail. It's only like ten seconds but it gives you a lot of information about himself and the significance of the occasion

Same with Sonny. Sonny could've easily succeeded Vito for good and beat all the families himself if he hadn't been so impetuous.

Sonny didn't have the cunning to beat the rest of the families. He'd be a strong leader but he didn't have the smarts

It was to make the Tattalia's look like a big deal. Wrapping a fish in his vest means he sleeps with the dogs and gives us a little insight into a mafia style hit.

He wouldn't even need to necessarily keep his temper in check, just have good advisers who could keep him restrained.

in the book, the Don admits Luca makes him nervous. After he leaves the room the don gets a sense of relief that he has left

So why did they make him so different in the movie? All I saw was this awkward big guy who walked into a bar and got killed, I didn't get any sociopathic terminator killer from him at all.

Since Coppola was dealing with heavy opposition from Frank Sinatra, the Mafia and the Italian Anti Defamation League for making the Godfather, he had to make a deals with them.
This lead to many mobster hanging around the set. Lenny Montana was there as bodyguard for some mobster.
So since the original actor was put, Montana was hired and the role adapted to his acting skills.

The issue is that mafia movies never actually show you where the money comes from. They just allude to people "earning" and all the tension and drama comes from whatever shit is going on between the power players within the mob. You're only seeing mafioso A fighting mafioso B, but not the fact that either of their people get money by going around to random shop owners and forcing them to pay money or else they get their kneecaps blown off. So this allows everyone to fantasize and romanticize the mob.

Casino and Goodfellas do a good job of showing how vicious their "earning" can be. But yeah, fiction that deals with the bosses and mafiosos hardly ever show that, those mostly deal with the politics of the families.
