My working theory is that Rey actually was at Luke's "academy" if you will. Kylo rebelled and killed the other padawans, but couldn't bring himself to kill Rey (for whatever reason. Related, friend, whatever) and mind-wiped her as and stranded her on Jakku. Luke thought she was dead this whole time. Kylo sort of seemed to recognize her, but if he didn't it may be because she was just a kid when he last saw her. It also explains her uncanny ability with the force.
