With rock bands I think the live version is definitely the more true version of a song. Most engineers and producers prefer to have bands record to a click track in the studio. Mapping out a click track perfectly for a song that has been written and rehearsed live is pretty much impossible unless your drummer is a drum machine. The general instinct is to not rush the tempo, so the click often ends up being a little slower than how the song is played in rehearsal.
