Modal jazz is, basically, where the underlying structure of the song is derived from sequence of musical modes rather than chord progressions. So in Flamenco Sketches the song is structured with bars of C Ionian then Ab Mixolydian then Bb Ionian then G harmonic minor then G Dorian.
Kind of Blue is probably the best example of a modal jazz album.
