I'm getting back into death metal, and I want to go back and listen to some of the 80s and 90s classics that I missed before. I used to listen to a ton of OSDM, but I kinda stopped a few years ago, and I'm just now rediscovering it. Post only the most essential, classic, old school death metal albums.

Pic related is about as classic as it gets. Perhaps even more classic than Death.

Bolt Thrower, Obituary, Dismember, Entombed, Autopsy, Morbid Angel and Gorguts all made several classic albums so check them out for sure.
Also it's always worth revisiting None So Vile thought it's not OSDM.
No love for Sweden?

This isn't exactly "classic" or "essential" but its some pretty fucking good death metal from 1991.
People are going to shit on me for this, but there was a time when Cannibal Corpse was considered good.
Here's a chart I made some time ago
holy fuck, this is good tho
I unironically enjoy CC. Their newer stuff too.

What's the appeal of this genre? To be as gross and edgy as possible?
If you think regular old death metal is gross and edgy, wait till you hear slam.
