From what I understand she thought she could move on to bigger and better things and that if she were "trapped" on Star Trek that's all she would be known for and type casted as.
She was right, but that because she left too soon not because she stuck on.
She might have gone onto to do other television things or gotten smaller film rolls (nothing like the B movie schlock she ended up doing) had she stuck around. But I think it gave TNG a bit of weight that character could actually die that weren't just red shirts like in TOS.
