Chinese business interests encouraged the US to take a positive stance towards China from the moment it started getting involved in the Pacific up until the commies took control of China. Those same businessmen fled to Taiwan, and are a big part of the reason for the US being so pro-Taiwan and anti-PRC for about 20 years, until Nixon figured out that China made strategic sense, then later Clinton recognized that it was bad for business to be anti-China. Look up the "China Lobby".
East Asians are less than 3% of the US population. There is no incentive to give asian men a lot of prominent heroic roles in movies. And even then they pop up all the time, although they're usually a kung fu stereotype.
