They are also issued some kind of horrible alcoholic drink, so they must have brewers and barrel makers. They wear armor, hence there is a need for blacksmiths and miners and engineers to design the forges. Fire is needed to power them, alas they need loggers and people to transport the wood. A society geared toward total war still need carpenters, textile workers, people to make and maintain infrastructure, construction workers, cooks, bowyers, fletchers, couriers, I could go on and on. Is it really that far fetched to think that an orc would be at least familiar with the concept of a menu?

Menus are specific to the available foods, even if they had all the ingredients required in the listed dishes on the stolen menus, it wouldn't be reasonable to dedicate the time required in their preparation. They would also require frequent changing based on the available foods, and so on. It wasn't be reasonable to operate off a once-off stolen menu.

These armies were around 10 000 men strong. Having a standing army is an incredible strain on the land they camp on.
