Why did France do that much more than Spain?

Catalan, Basque, and Galician are all pretty vibrant in Spain, while the only regional language I've come across in France was Occitan, and that was just some street signs.

They're French with parts of Germanic culture.

To keep the nation united instead of nurturing regionalism. Unity of language is a strong leverage for that.
The more powerful regionalism is, the more the people think they're different from their neighbours, the less solidarity there is between them, the more divided they are.
Just look at what is happening in Spain or Belgium, even in Canada or Swiss it generates tension.
France didn't want any of that and massively removed regional languages.
Even to this day, the regions that have the strongest remnants of their old language are the ones with the most powerful and active independantist/autonomist parties, like Basque Country, Corsica, Britany or Catalonia.
