First of all there isn't a "warm winter" place, they probably are warm by being used to your winters anyway, but there can be cold days sometimes. F.ex it snowed in Torrevieja (one of the warmest winters in the region) past january. But, the other time it did was in 1927. So.
Btw, La Marina Baixa seems like your place. Summers aren't that hot, winters are not as cold as in La Marina Alta and it rains less. Dozens of medium to small sized urban areas, but AVOID Benidorm, extremely overcrowed and it's the vacation place of all Europe social vermin

Murcia is way more traditional than Valencia. Their people might be rough and kind of dumb but at least they behave decently. I'd say Spanish first, but I'm from the southern province and we feel less valencian than the others so it may be different in the north. In my city people only speak spanish, if you hear someone speaking valencian they're probably from somewhere else.
