Cauterization actually is something that causes infection. Its an outdated technique, sure its stops the bleeding but more than likely if you cauterize a serious wound without medical attention you'll die from infection. Learn your medical practice user, sheesh.

Initially there would be no pain. It would start to hurt extremely bad about an hour later, but the wound would be cauterized so it would just need to be washed and wrapped and that's it.

Cauterization takes a bunch of tries even if you get all the flesh. You ever stick superheated hot metal onto a wound? Always has to be done at least three times. But whatever, it's a movie. By all rights, Luke should have fallen to his death seconds later so I guess slightly unrealistic bleeding isn't a legitimate complaint.

Not to mention that Star Wars humans live in a different galaxy. Maybe their bodies are a little different.
