assuming pc is running windows os, you can access the files within it if you do some research. phones are a little harder, especially if it's ios, you'd need some time with the phone and i assume they would take it everywhere with them. you can get a keylogger and hook it up to the pc and you can track whatever they're typing. you can google and find one online. good luck bro

The short answer is no. Even if you had access to the router the computers are connected to and you were an experienced network administrator, gaining the type of access you're asking for is really difficult.

And packet sniffing will just get you a bunch of encrypted data, which is useless. There are practically 0 websites out there that use unencrypted HTTP when prompting for login credentials. So if you're trying to grab login creds using packet sniffing, don't even bother.

Targeted attacks include dropping a tailored malware onto the device. This, roughly, translates into installing something on their computer. 80% of attacks use social engineering to deliver the payload. For example, a well crafted email talking about a point of interest that'll convince them to click a link/download attachment and give permissions to everything asked.

Assuming you don't want to tamper with their device (most likely will take too long to bridge the knowledge gap), you can also try to gather data by sniffing/man in the middle. In practice, your computer will tell everyone on the network that it is the new router and everyone should send out network traffic through it. It will do this at a high frequency to "silence" the real router. But, this isn't a perfect attack. Most sites use TLS (encrypting the data transferred) and a certificate to validate the origin (the "real" www.google.com sent you the answer). If you try to intercept this communication, it'll be encrypted and you'll have to wait for quantum computers or buy ~1-2 seconds of Google's million[s] server farm in order to crack the encryption. Or, simply put, nah.

Alternatively, you'll want to pose as www.google.com (or www.horsemidgetporn.xxx, w/e). For that, you have to provide a certificate that the client will successful verify as signed by a trusted party. The signing is done with a digital key that is kept secret and, theoretically, only the vendor has it (for example, commodo signed for authenticity for your site, www.foobar.info, and the client trusts commodo). You don't have the key, unless you're China and spear pished your way into rsa.com to steal Lockheed Martin's stealth plane plans, so you opt to randomly create your own key and sign a bullshit certificate. The browser will give off a big fat warning, telling the user they can't verify this certificate because the signing party isn't a trusted one.

Unless you work at a shit company that adds their own certificate authority to work stations and look through all their employees' data, you're left with a big big hope that the victim uses a browser that allows them to ignore this warning (chrome isn't on that list) and they'll actually rummage through the option to do it.

In theory, you can ask both client and server to not use any TLS version because you are "too stupid" but that won't work after the bronze age because of HTST. This tells the browser "if TLS worked sometime in the past, it can't just suddenly not be supported". But, you are welcome to play around with it on a cooperative target (who'll run an old Firefox/ie browser). SSL strip. I think they have a better version 2 out but it's been a while.
Otherwise, you're just down to harvesting a lot of unencrypted data that'll, in practice on a home user, lead to dick. Oh, not to mention your network card is shit compared to a router and everyone will notice a severe slowdown. Not ideal.

All this assumes they have a modern OS and leave the auto update feature on. If they have an archaic OS, you can look for a vulnerability (cvedetails.com/), find a working exploit for it (exploit-db.com/), test it on a lab offline (VM with same victim setup) and fire away. You can spare some headaches using metasploit.
And, if you actually want to go through it and aren't looking for a copy paste solution, I'd recommend starting off with offensive-security.com/metasploit-unleashed/, a free course by a leading vendor.

Your best bet is using what those 80% are doing. Use the above link to gain some knowledge into injecting a payload (basically, all your base are belong to us) into a legit software or app and social engineer its way onto the victim's device.
