That documentary was really fantastic. The thing that struck me about it was how hollow OJ looked in the eyes even when he was at his prime. He just looked like he was faking at every moment of his life. But that could just be me projecting based on what I knew he ended up doing.
On the last point;
We have laws against "double jeopardy" (meaning multiple trials for the same act" for a few reasons.
One; without them you could literally just keep retrying the same person again and again until they are broke and or just commit suicide. May seem fine in a case like OJ. But what about guys like the ones accused in the Duke rape case?
Two; it's insane to keep trying until you get the result you want in such things. Like with politics "let's keep voting until we get the result we want" remainers in Brexit
Three; cost. Trials cost money especially high profile cases. Having them run on a loop just drains public funds like a sieve.

Both sides can appeal. They just can't bring a whole new trial against him without a successful appeal. They would have to attack the verdict on an error of law, fact, or procedure.

You can appeal to higher court. The higher court will review the case and take it if they see a problem with the first proceeding.
