Why does everyone assume this? I'm not sayint that's not likely, but I doubt they are planning on killing off everyone. Breaking Bad is a separate story, and Saul was a minor character in that story. We never got to see Saul outside his lawyer office in Breaking Bad, we only saw the side of him that interacted with Jesse / Walt. Kim could very well be alive in that universe, and just not be with Jimmy. The same can be said for Chuck.

Is it bad that I actually kind of like Better Call Saul more than Breaking Bad? The characters are much more well developed and realistic, and there's very little "ridiculous coincidences" shit that plagued BB.

This is all part of the plan, that's why Chuck is confident that he can get revenge.

Ernesto doesn't know shit. All he knows is that it's Jimmy's voice on the tape, and because he knows Chuck has a massive hateboner for Jimmy, he probably assumes the tape has nothing special on it. Still, I think he will tell Jimmy, and that Jimmy will go after the tape, which will lead to some type of confrontation, but probably not in court or with the police.
He still has hope that he can change Chuck's mind, otherwise he wouldn't be bothering to help him. Cutting your own brother completely out of your life is extremely difficult.

A character spending so much time on something so trivial is generally an indicator that they are stressed out. Kim knows that Chuck was right and that Jimmy falsified evidence in order to drive the Mesa Verde clients to her, so she feels somewhat guilty and she has to make sure that she doesn't fuck it up.
