Cheddar is the only one I keep coming back to. Others can be incredible every once in a while, but for a steady, keep a bit in your fridge at all times, kinda cheese - always for cheddar.

I've cycled through a lot of cheeses on my daily sandwich I take to work. Provolone was the old standard set by my dad many years ago, but I kind of burned out on it. Various cheddars, Swiss, Pepperjack, Gouda, Havarti, Colby...

If have to say my current preference is for an Aged White Cheddar. Several years back I picked up a large block of Australian Cheddar which was also very good.

Parmagiano and Gorgonzola are god tier. You haven't lived until you have tasted a Quattro Formaggi in Italy.

Yes, processed cheese is American cheese. It is also one of the cheeses that has the highest melt factor. It is good for something in the end. The best results are mixing American, Swiss and cheddar for a beautifully fluid cheese with bite.

Colston Bassett Stilton (pic related) - the best Stilton there is and thus the best blue cheese there is. Perfect with an LBV port.
Lincolnshire Poacher - hard cow's cheese similar to a Cheddar but more intense and very well aged. My go to hard cheese, perfect for any occasion, loads of flavour, tangy and very mature. Great with a hoppy IPA.
Époisses - Rind washed soft cow's. Gorgeous, rich, pungent, complex, intense flavours, meltingly soft and runny. Excellent with dessert wine.

Some other honourable mentions: Any Extra mature/Vintage west country Cheddar (Cornish Quartz is a good one).
Cave aged Gruyère.
Brie de Meaux or Camembert.
Comté.
Oude Gouda (at least 2 years)
Many numerous delicious soft French cheeses, eg. Saint Marcellin.
Any strong, soft goats cheese.
Etc etc.
