Wedge along with the Bounty hunters are easily my favorite characters in star wars. But to answer who's the best rebel pilot? Normally Id say luke but we never see him in a space battle after episode 4, so yeah Wedge is the only canonically person to have survived both Death Star runs. Whether that means he's good or lucky is up for you to decide.
